We make a prior contract with farmers in the area setting minimum quality conditions; it goes without saying that the price is always upwards, which is logical and necessary in order to be able to make demands.<\/p>\n<p>After monitoring the progress of the harvest on the farms themselves, the peppers are harvested; this is done little by little and in layers in order to deliver the well-selected peppers to our processing workshop.<\/p>\n<p>Once they have been weighed, they are roasted directly on a sheet of wood so that they retain all their essence and at the same time acquire the smell and flavour that comes from direct contact with the wood as it burns. They are then peeled dry without any contact with water or chemical substances. This work is very laborious and requires a lot of patience... but... like everything that is really good, either it is done in this way, at the usual cost, or the process is prostituted.<\/p>\n<p>Once peeled, fill the glass jars \"A Tope\" so that there is no air inside, and add a little squeezed lemon juice to each jar. Close the jars and then bake them in a bain-marie.<\/p>\n<p>It goes without saying that the whole process is done by hand, as it has always been done in Cacabelos. We do it in the same way, but we take the utmost care in terms of cleanliness and sanitation.
