We make a prior contract with farmers in the area setting minimum quality conditions; it goes without saying that the price is always upwards, which is logical and necessary in order to be able to make demands.<\/p>\n<p>After monitoring the progress of the harvest on the farms themselves, the peppers are harvested; this is done little by little and in layers in order to deliver the well-selected peppers to our processing workshop.<\/p>\n<p>Once they have been weighed, they are roasted directly on a sheet of wood so that they retain all their essence and at the same time acquire the smell and flavour that comes from direct contact with the wood as it burns. They are then peeled dry without any contact with water or chemical substances. This work is very laborious and requires a lot of patience... but... like everything that is really good, either it is done in this way, at the usual cost, or the process is prostituted.<\/p>\n<p>Once peeled, fill the glass jars \"A Tope\" so that there is no air inside, and add a little squeezed lemon juice to each jar. Close the jars and then bake them in a bain-marie.<\/p>\n<p>Ni que decir tiene que todo el proceso, es hecho a mano, como siempre se hizo en Cacabelos. Despu\u00e9s los pelamos en seco sin contacto alguno con agua ni sustancia qu\u00edmica. Este trabajo es muy laborioso y requiere mucha paciencia\u2026 pero\u2026 como todo lo bueno de verdad, o se hace as\u00ed con el consabido costo, o se prostituye el proceso.Una vez pelados se llenan \u00abA Tope\u00bb los tarros de cristal para que no quede aire en el interior, y le a\u00f1adimos a cada tarro un poquito de lim\u00f3n exprimido.
